A honey bee (not including stingless honey bees) is any bee of the genus Apis, primarily distinguished by production and storage of honey along with perennial, colonial nests made of wax. There are 7-11 species of honey bees, along with 44 recognized subspecies. However, there are actually over 20,000 total known species of bees! The study of honey bees is called 'melittology'.
